Speculaas (St. Nicholas Cookies)
| 1 c. butter |
| 1 c. lard (Crisco) |
| 2c. sugar |
| ½ c. sour cream |
| ½ tsp. Baking soda |
| ½ tsp nutmeg |
| 4 tsp.Cinnamon |
| ½ tsp. Ground cloves |
| 4 ½ c. flour |
| ½ c. nuts * |
Cream butter, lard (Crisco) and sugar together. Add sour cream and sifted dry ingredients. Mix well. Shape into a roll and wrap in waxed paper. Place in refrigerator overnight.
Cut into slices and place on greased cookie sheet.
Bake at 350 until light brown (about 10-12 minutes).
Makes 7-8 dozen.
* Almonds are the usual type of nut. If sliced almonds are used, press several into each cookie after slicing the dough.
* If chopped nuts are used, mix the nuts in with the dry ingredients.
They can also be made in the shapes of St. Nicholas, heart or windmills. They are often decorated with white icing and/or almond halves.
